Scrambled egg beaters

No time to cook up a fancy dinner tonight...work pressures prevail.

But in an attempt to eat healthy, I tried out an altered version of Classic Omelet with Scallions and Potatoes (using Eggbeaters) from Prevention's Healthy One-Dish Meals in Minutes. I used the same ingredients, but made scrambled eggs instead.

Saute one (thinly sliced) medium potato, 1/2 green pepper (chopped) and 1 small onion (sliced long) in olive oil for 2-3 minutes; add this to the egg mixture along with pepper and salt, then pour the mixture in a pan and scramble for 3-5 minutes till cooked. Voila!
It tasted really good....with bread or rice. I can say this without reservation, because DH said so himself.

Now, DH is an ardent advocate of the egg. He has declared open war on all egg substitutes...and will boycott any product that claims to come close in taste to the egg. So, of course, I said nothing to him about the main ingredient of this scrambled egg concoction. I just presented the final dish...and it not only passed inspection, it was wolfed down with no further ado. His jaw dropped a bit with his last mouthful...when I smugly declared that it was Egg Beaters and not Egg.

I love tricking my husband about what he is eating . . . I put all of my leftover homemade baby food purees into his meals, and he never had a clue!
