Pepper chicken & noodles

It's been a while since I've posted a recipe accompanied by a blurry picture, so I decided to go ahead and post one today for your viewing pleasure...feel free to feast your eyes.

My creative talent (or the lack of it) in the culinary department has been lying dormant for the past couple of weeks, due to work pressures; as DH and I have been relying on mass-produced curries instead, that I can whip up in my sleep. These satisfy the stomach, but unfortunately not the sensitive palate, which craves variety. So, last night, I dove into New World Chinese Cooking and came up with something quick, easy...and tasty.

Cook angel hair pasta. Sprinkle chicken with salt and crushed black pepper. In a skillet, heat oil over medium heat. Add onion, ginger and garlic. Fry until fragrant, about 1 minute. Push vegetables to one side of skillet; add chicken and stir-fry until meat turns opaque and golden, about 3 minutes. Add bell peppers and stir-fry 1 minute. Add sauce mixture (1 tbsp cornstarch; 2 tbsp duck sauce; 1 tbsp soya sauce; 4 tbsp chicken stock). Bring to boil and stir until sauce thickens.

The chicken and noodles combined well with steamed broccoli.

Workouts are on track so far, this week. And except for the occasional twinge in the knee (methinks it's time for new shoes), the body seems to be responding well to this Building the Base phase.

Monday: 6 miles and spinning class
Tuesday: 4 miles
Wednesday: 8 miles and spinning class

March has been a great base building month, overall; 118 miles.

I haven't set any hard goals for April (aside from fooling DH today, which I successfully did). I look forward to warm weather. Happy April, all!

those quick curries that you can make in your sleep is what I envy the most!!! I have never made one because I am super intimidated.

and you are a workout machine. 8 miles and then a spin class - I could never do it.

Oh, my April fool prank...it's rather boring. DH has always been lukewarm about our tax accountant.

So, I called him at work and told him our accountant had called and we owed the federal government a ton more money than we originally thought. He freaked out, as men usually do when money is involved; and went off about the 'incompetent accountant'. I actually felt bad for the poor accountant, who had to be the scapegoat! But all's well that ends well, I guess!
