Curried chicken and spinach grilled sandwich

So much for braving the snow storm! When I woke up yesterday, there were a few lazy snow flakes floating down to the earth...nothing alarming. If I was the adventure-lover I like to think I am, I would have taken it in stride, donned the running gear and skipped outside, catching snow flakes on my tongue as I ran. But being the wimp that I am, I overslept, then bundled myself in a blanket, armed myself with a warm bowl of oats and settled down to work from home.
By 5 pm, the snow was coming down harder, but guilt strengthened my motivation and I drove to the gym, determined to get a good workout. I did 4 miles on the treadmill and a BodyWorks class. The teacher really worked us. I didn't realize it then, but this morning, my quads, inner thighs and shoulders were really sore. So sore that I skipped the gym today and just did 45 minutes on the exercise bike along with a few half-a$$ ab exercises.

When I find myself lacking creativity and enterprise in the food department, I resort to tried and tested dishes...like Curried Chicken and spinach grilled sandwich, which we've eaten a million times. I think this was one of Rachel Ray's recipes originally, but I've tried it so many times, it's gotten very customized along the way.

What you see below is chicken and spinach (mixed in a paste of mayo, lime juice, yoghurt, grated ginger, curry powder, chilli powder and salt, and cooked in olive oil), that goes betweeen 2 slices of whole wheat bread. A slice of cheese is added to the sandwich and grilled. Very quick and painless (and I assure you, tasty). It goes down well with a glass of milk.

mmmm yummy combo! I love cooked spinach. Good for you for getting in a workout despite the snow! I hate cold. Where is our lovely spring weather so we can run outside?
